I tried out a “make your own no-bake granola bar” recipe recently, and the results were mixed. They were tasty but didn’t stay together very well. Apparently, you need to really really really flatten them into the pan. Way too much work!
So I modified the recipe a bit, and shaped them into bite size rounds for a great on-the-go snack.
Here’s the recipe:
Ingredients
- 1/2 cup nut butter (almond, peanut, etc.)
- 1/3 cup liquid sweetener (honey, maple syrup, agave)
- 1 cup oats
- 1 tsp vanilla
- Optional – sprinkle of one or more of the following: raisins, chocolate chips, chia seeds, flaxseeds
Steps
- Mix all of the ingredients together (a kitchen aid comes in handy here!)
- Use an ice cream scoop or a melon scoop to shape into rounds
- Store in airtight container in the refrigerator. (Parchment paper works great to prevent the rounds from sticking to each other.)
