Banana Smoothie

I love bananas! They’re tasty, healthy, and portable. But sometimes, I don’t eat them as quickly as I should, and they start to turn. Then I think, I’ll make banana bread or banana nut muffins. And when that doesn’t happen, well…we’ve all been there with the black banana peel barely containing the soupy mess.
Next time you have a banana surplus, make yourself a healthy green smoothie! Overripe bananas are naturally sweet, so no need to add additional sugar or sweeteners.

Here’s a simple recipe:

  • 2 cups spinach
  • 1 overripe banana
  • 1 cup vanilla yogurt
  • 1 cup milk (almond, coconut, soy, etc)
  • 2 tbsp of lime juice (optional – gives a light citrus-y flavor)
  • Blend on high with a bit of ice, which helps to chop up the greens
  • Enjoy! Put any extra in a Mason jar to go for a healthy pick-me-up.

Still too many bananas?  Peel, break into chunks, then freeze. You can easily pop a few frozen banana pieces into your blender to make a sweet cool treat.
